We roast in 8 kg batches. We do not apologise for it.

Why slow matters

The bean has been growing for two years. The least we can do is listen to it for twelve minutes.

A fast roast is a roast that flinches.

What we look for

  • First crack timing
  • Development time ratio
  • The colour of the bean two seconds before it speaks back
